Trung Thu ngày ấy... bây giờ

   
    Có lẽ trong ký ức của mỗi người Việt, Tết Trung thu luôn là một dư vị ngọt ngào của thời thơ ấu. Ngày ấy, Trung thu giản dị lắm, một đêm tháng 8 trăng tròn,gió hiu hiu và những tiếng trống hối hả của những đám múa lân trên đường phố, những chiếc bánh trung thu hình tròn hoặc hình vuông xinh xắn hoặc bình dân hơn là chiếc bánh hình con heo mập ú dễ thương với cặp mắt đen nhánh làm từ hai hạt đậu, những chiếc đèn trái bí, đèn ú, đèn ngôi sao. Lũ trẻ đi xem múa lân thường mang những cảm xúc lẫn lộn, vừa thích, lại vừa sợ. Thích nhìn những con lân sặc sỡ sắc màu,leo trèo điệu nghệ, nhưng cũng sợ ông địa bụng to cứ phất phơ cái quạt quanh mình, tay kia đưa lên cái miệng luôn cười toe toét làm duyên. Mà cũng lạ, Trung thu là ngày lễ của con nít mà người lớn cũng vui. Người lớn thích rước đội múa lân vào nhà múa cho "vui nhà vui cửa" và tống đi những xui xẻo, treo một giải thưởng trên cao rồi xem con lân leo lên cái sào cao đớp giải và cười như con trẻ. Trong tâm hồn của đứa bé là tôi ngày ấy, chưa bao giờ có ý nghĩ, dù là thoáng qua, rằng một ngày nào đó mình lại sợ tết Trung thu...

   Vậy mà giờ đây,cảm giác ấy đôi khi cũng hiện hữu.Cứ mỗi năm đến tháng 8 âm lịch, gần lễ Trung thu là tôi lại có cảm giác sờ sợ. Đó là sợ tiếng trống đinh tai nhức óc của những đám múa lân, không còn diễn ra một hai đêm như trước mà thậm chí cả tuần trước dịp lễ. Trước đây người lớn múa cho con nít coi, bây giờ trẻ em ở các khối phố cũng rủ nhau lập đội lân đi múa mà vì là nghiệp dư nên phải tập luyện,thế là hàng ngày tiếng trống thùng thùng như đánh thẳng vào lồng ngực.

    Bánh Trung thu bây giờ đẹp lắm, sang trọng lắm, phong phú mùi vị và muôn màu muôn vẻ và đương nhiên giá bán cũng tăng lến gấp bội. Và như một lẽ đương nhiên, những hộp bánh trung thu ấy bỗng trở nên xa vời với những em bé nghèo và cũng hẳn nhiên và buồn thay, chúng trở thành những món quà của người lớn tặng nhau. Giật mình khi thấy một năm nọ, ngày lễ Halloween của phương Tây lại được tổ chức rầm rộ và truyền hình trực tiếp trên VTV3 trong khi trẻ em Việt Nam đã có ngày lễ Trung thu từ bao đời nay rồi...

   Hôm nọ đi nhà sách, tình cờ thấy nhân viên đang treo mấy cái lồng đèn trung thu hình trái bí. Mừng như bắt được vàng (nói hơi quá chút,) vì lâu lắm rồi mới thấy lại kiểu đèn này. "Ngoài những mẫu này còn có những mẫu nào khác nữa không?" Tôi hỏi người bán hàng. "Có mấy mẫu Doremon kia nữa anh". Tôi lắc đầu cười "Không, loại trái bí này kìa." Sau một hồi cân nhắc, ngắm nghía kỹ càng, (chắc mấy cô bán hàng ngạc nhiên lắm), tôi chọn mua mấy cái mang về. Những chiếc lồng đèn trái bí rất đơn giản vậy mà thật đẹp. Mà có lẽ còn đẹp hơn vì ký ức. Vội chạy về nhà nôn nóng mở ra chuẩn bị treo lên, nhìn cái nhãn bên trong lại thấy buồn năm phút.Những chiếc đèn lồng này rõ ràng là rất dễ làm, sao lại là hàng Made in China kia chứ? Sao không phải là hàng Việt Nam? Nhớ những ngày đầu ở Mỹ, đến những trung tâm mua sắm, điều làm tôi vui nhất, ấn tượng nhất không phải là những thứ hàng hóa điện tử hiện đại đắt tiền, mà là những thứ nhỏ nhặt đến không ngờ nhưng lại vô cùng cần thiết trong cuộc sống hàng ngày...

    Thế đấy, mặt trăng thì vẫn tròn nhưng Trung thu có khác. Nói vậy thôi chứ làm sao tôi có thể ghét ngày tết Trung thu được, vì đơn giản đó là kỷ niệm và quan trọng hơn nữa, đó là ngày của con. Chỉ mong sao người lớn, dù vô tình, đừng làm mất đi ý nghĩa giản dị của ngày lễ này mà thôi,giản dị như muôn đời vẫn thế.

Huyen Tran Temple and the Touching Story

Princess Huyen Tran was born in 1287 to King Tran Nhan Tong and Queen Kham Tu. In 1306, to help maintain the good relation between the two neighboring countries, she agreed to get married to Champa King Che Man and became Queen Paramesvari. Right before the marriage, King Che Man donated land as a wedding present which is now part of our country from Quang Tri to Quang Nam. Unfortunately their happiness didn't last very long. King Che Man passed away just one year later. It was the custom in Champa at the time that the wife must be set to fire when her husband died. Well aware of this, King Tran Anh Tong sent his men to Champa and brought Huyen Tran back home successfully and the next year, she became a nun. She passed away in 1340 to the regret of people.

Huyen Tran Temple was built in Hue in 2006 on the occasion of the celebration marking 700 years of Thuan Hoa-Phu Xuan and the construction was finished one year after that. The temple soon becomes a well-visited place. People come to pay homage to a respectful princess thanks to whom they have the city of Hue today.

    These stone dragons are well known as the longest ones in Vietnam ever built. But it's not the record that I care about. What I care is their beauty; the way they are meticulously scarved  shows the skillfullness that the builders and craftmen can boast.

   Phoenix are found everywhere in the temple. Do you know why? Because this monument is dedicated to a female. In the East, dragons are often used to embellish constructions dedicated to men and phoenix to women.

 No picture of the princess was recorded, as common was at the time, and it's hard to figure out what she looked like. But based on the descriptions of her brother King Tran Anh Tong and the fact that she was much adored by the king of Champa, she must be a beautiful princess. This statue of her was made in her costume as a nun after the rescue.

   This route leads visitors to the tower named Tower of Peace which contains a giant bronz bell. It's rewarding to listen to the sounds of the bell after the long and hard climb. The view of Hue City from this elevation is equally amazing.

Actually the temple is also dedicated to the princess's father King Tran Nhan Tong who was the founding father of Truc Lam, a Buddist denomination. 3 pagodas of this denomination named Truc Lam Thien Vien have been built in Vietnam, one in the north, another in Da Lat and the other in Hue near Truoi Lake. (I have been to Truc Lam Thien Vien in Da Lat, but not the one in Hue yet. Hope someday...) After a rest at the Tower, visitors can follow the route down the mountain to visit Thien Vien.

Cái lý của ẩm thực

 

     Lần đầu tiên nghe nói ở Hà Nội, người ta ăn điểm tâm bằng trứng vịt lộn, tôi thật sự bị sốc. Bới vì ở Huế từ xưa đến nay, theo lệ thường, trứng lộn, (ở đây gọi như thế,) chỉ được bán vào buổi tối, mà người Huế cũng chỉ ăn món ăn này vào bữa tối mà thôi. Chị bán trứng vịt lộn ở Huế là một hình ảnh rất đặc trưng, đó là chưa kể tiếng rao cũng vô cùng đặc biệt, một tay xách chiếc đèn dầu hỏa tù mù, kiểu như chiếc đèn măn-sông nhỏ để tránh gió thổi tắt và tay kia cắp rổ trứng, chính xác là một cái thúng, đựng chiếc bao bố dày chứa trứng bên trong để giữ nóng. Khi có ai gọi, chị đặt ngọn đèn xuống đất, lôi ra chiếc đòn nhỏ, ngồi xuống và đút tay vao bao bố, lấy ra từng cái trứng một rồi soi vào cây đèn để chọn loại non hay tra (già) tùy theo sở thích của thực khách. (Thật ra, nếu trong bao chỉ còn vài cái thì cũng cứ luân phiên lấy ra săm soi, "vô ra cũng thằng cha khi nãy" cũng chẳng ai biết.)  Sau đó, những chiếc trứng nóng hổi được bỏ vào một cái đĩa bày trên cái sàn bằng tre cùng chén muối tiêu và mấy cọng rau răm. Chỉ có thế. Thực khách thường cũng ngồi xuống cạnh chị, trong bóng tối lờ mờ hắt ra từ ngọn đèn dầu, (vì thế mà có danh từ đèn "hột vịt lộn"), thong thả đập đầu to của cái trứng, ghé miệng hút lấy phần nước nóng hổi, thơm lừng và ngọt ngon không kể xiết,  (hình như đó là phần ngon nhất của trứng lộn.) Tiếp theo, dùng tay lột tiếp phần vỏ trứng rồi nhúm một chút muối tiêu cho vào cái trứng, lúc này đã lộ phần lòng đỏ vàng nhạt và đưa lên miệng cắn một miếng, lấy thêm một cọng rau răm cho vào miệng nhai cùng và đó là miếng thứ hai sau khi hút hết nước. Và sau đó, ăn miếng thứ ba bằng cách ngửa mặt lên trời, tay bóp cái vỏ trứng để cho trọn phần còn lại rơi vào miệng. Và như thế, đâu chừng 3 miếng là xong một cái trứng vịt lộn. Đặc biệt không bao giờ có kiểu lột nguyên cái trứng bỏ vào bát xúc ăn như ngày nay thỉnh thoảng vẫn thấy đâu đó. Ngang đây, có thể bạn đọc thắc mắc sao lại phải miêu tả dài dòng và chi tiết cách ăn một cái trứng vịt lộn của người Huế như thế. Thật ra, viết như thế là có chủ đích, tại vì sau này, có lẽ do sự giao thoa văn hóa giữa các vùng miền, ở Huế, kiểu phục vụ trứng vịt lộn cũng có vài thay đổi , (dù hình như là để chìu lòng thực khách là người từ các vùng khác đến, hơn là người Huế "cũ", vốn vẫn trung thành với kiểu ăn như nói ở trên, trong đó có tôi). Ngày nay, nếu để ý, bạn cũng có thể thấy ở các hàng bán trứng lộn, đôi khi còn bày thêm một cái tách nhỏ để người ăn bỏ trứng vào đó rồi dùng chiếc muỗng nhỏ xíu khẽ nhẹ vào vỏ rồi múc từng miếng nhỏ thong thả cho vào miệng nhai kiểu cách. Các thứ ăn kèm cũng không còn đơn giản là muối tiêu và rau răm như trước nữa mà tùy theo yêu cầu, có thể thêm đồ chua ngọt làm bằng đu đủ và cà rốt xắt sợi, có khi là những lát gừng vàng tươi và cả nước mắm chua ngọt. Nhìn cách người ta ăn trứng lộn theo kiểu trước đây, có người của thời nay ngạc nhiên và chê sao mà thô lỗ và hàm hồ thế. Tuy vậy, mọi chuyện đều có lý do ẩn chứa đằng sau, lại thường lại kín đáo, và vì thế chẳng phải ai cũng thấy, đặc biệt là người từ những vùng khác, vốn quen với kiểu ăn khác. Thật ra, ấy là bởi vì, món trứng lộn, dù ngon và bổ, thì đối với nhiều người, vẫn là một cái gì đó ghê ghê, và vì thế người ta không muốn nhìn thấy khi ăn. Cách ăn mô tả trên đây của người Huế là để tránh không nhìn thấy... Viết đến đây tự nhiên tôi liên tưởng, người ta thường nói người Huế ăn bằng mắt, điều đó không sai nhưng phải mở ngoặc thêm vào vế "ngoại trừ trứng vịt lộn" thì mới đầy đủ...

       Một lần xem trên TV chương trình phỏng vấn một cụ đầu bếp nấu phở thuộc hạng lão làng ở Hà Nội ông có nói đại khái rằng, ngày xưa, người Hà Nội không ăn phở như kiểu bây giờ với thìa và đũa, gắp một ít bánh phở (ngoài Bắc gọi là "cái",) bỏ vào thìa rồi mới cho vào miệng nhai từ tốn. Ngày trước, người Hà Nội chỉ dùng đũa gắp sợi phở cho vào miệng, rồi dùng hai tay bưng cả tô phở lên, ghé miệng húp một ngụm nước phở nóng hôi hổi. Bạn đã bao giờ thử chưa và thấy thế nào? Lúc ấy, thực khách mới thấy hết cái thú của việc cả lồng ngực nóng ran lên trong vị đượm của hồi, của gừng, của quế, những gia vị tiêu biểu của món phở giữa tiết trời lạnh giá của mùa đông phương bắc. Cũng vậy, như kiểu ăn trứng lộn của người Huế, kiểu ăn phở của người Hà Nội cũng không hề hồ đồ và thô thiển mà đơn giả là vì nó làm ấm người vào những ngày đông gió rét.Và đó cũng là cái thú mà món phở mang lại cho người Hà Nội xưa.

     Từ khi ở Việt Nam bắt đầu hiện những của hàng bán thức ăn nhanh (fast food) trong đó có hamburger và pizza, thỉnh thoảng, khi nhớ những món ăn mà tôi rất thường ăn hồi bên Mỹ, tôi cũng ghé vào ăn. Cái cảm nhận đầu tiên là hamburger và pizza được dọn ra cùng với muỗng, nĩa inox sáng bóng, ly uống coke cũng là ly thủy tinh trong leo lẻo. Và đương nhiên sau khi ăn xong, thực khách buộc phải để những thứ đó tại bàn, sẽ có người phục vụ đến dọn. Khỏe! Ở Mỹ, những quán ăn nhanh như McDonald, Burger King, KFC v.v. phục vụ 100% đúng theo nghĩa là self-service (tự phục vụ). sau khi sắp hàng ở quầy để order, khách trả tiền và đợi nhân viên đưa thức ăn ra và tự tay bưng chiếc khay về bàn mình, trên khay là chiếc bánh nóng hổi gói trong giấy cùng ly nước ngọt loại bằng giấy dùng một lần. Ăn xong, thực khách lại tự tay mang khay đến thùng rác trút hết mọi thứ giấy gói, ly giấy vào thùng rác rồi để lại chiếc khay nhựa bên trên thùng rác, thế là xong. Pizza thì có khác một chút, do cái bánh lớn, lại phải đợi nướng hơi lâu nên thực khách thường về ngồi đợi ở bàn và nhân viên sẽ mang bánh đến. Tuy vậy, ngoại trừ thỉnh thoảng có thêm cái dao chuyên dùng để cắt bánh pizza, chẳng có thêm một thứ gì khác và người ăn cứ thoải mái cầm miếng bánh lên mà gặm, muốn chùi tay thì đã có napkin sẵn đó. Đương nhiên, với kiểu phục vụ bánh hamburger như ở mình thì dù có muốn, thực khách cũng không thể tự phục vụ được vì không lẽ vứt ly thủy tinh và dao nĩa inox vào thùng rác? Nếu như bạn quen mắt với kiểu ăn hamburger hay pizza với dao và nĩa như ở mình thì có thể cho rằng sao người Mỹ ăn uống hồ đồ và "kém văn minh" thế. Thật ra, thức ăn nhanh nó vậy, phải ăn như thế mới đúng là fast food, mới đúng bản chất là nhanh và tiện.  Cho đến nay, mỗi lần ăn bánh pizza ở Việt Nam, tôi vẫn giữ thói quen ăn bằng tay, dù biết chắc sẽ có ai đó chê sau lưng mình là ..."nhà quê."

Van Mieu Hue

I remember in a televised contest some time ago, a contestant was laughed at by the MC when she said Van Mieu, The Temple of Letters, is in Hue in response to the question "Where is Van Mieu?" Though hers was not the expected answer and she lost credits by that, it was the MC himself who was wrong because there's, in fact, a temple of letters in the ancient capital of Hue besides the one in Ha Noi.

 

Van Mieu Hue, (better known to the locals as Van Thanh) is currently located on a low hill, just a stone's throw from Thien Mu Pagoda. From the pagoda, look further ahead on the right then you will see the gate of the temple. Thanks to its elevation, standing at Van Mieu, one can have a very nice view with mountains and the calm river in front.

Nguyen Kings and ancient Vietnamese people in general worshiped Confucius and his philosophy. Van Mieu was set up in honor of him. As normal was, Quoc Tu Giam, (somewhat like a university today,) was placed there on campus of the temple too before being moved to its present site in the Imperial City, next to the Citadel. At its best, there were altogether more than 50 structures, big and small. Since Minh Mang's time, stone steles on which the names of the people who passed the Hoi examinations and earned the highest academic degree at the time were inscribed, had been added. Though not much left today due to wars and nature, the most crucial things _ the 32 stone steles _ miraculously remain intact.

The steles serve as an invaluable source of information for historians and researchers and the whole temple demonstrates Vietnamese people's appreciation for learning and knowledge...

 

Một cuốn sách cho Huế

Có lần trên blog này, tôi nhận được một lời “trách” là tại sao có quá ít bài giới thiệu sách trong khi vẫn bảo mình là người rất yêu sách và đọc sách nhiều. Nhận xét đó không sai. Thật ra, lý do là thế này. Tôi đọc nhiều, hiện vẫn đi nhà sách đều đặn, nhưng khổ nỗi, lại là một người đọc “khó tính”, khá cầu toàn và kỹ lưỡng. Tôi có thói quen phải đọc đi đọc lại một cuốn sách vài lần rồi mới dám đưa ra nhận xét. Khổ nỗi, đôi khi thấy hài lòng phần này nhưng lại không thích phần kia, thế là cứ lần lữa, đợi chờ. Thôi thì hãy tập cách chấp nhận sự tương đối vậy.

Những ngày này, Huế đang gấp rút chuẩn bị cho Festival 2010 và tôi chợt nhớ đến một tập sách viết về Huế xuất bản đã khá lâu nhưng nếu muốn tìm hiểu về Huế và văn hóa xứ này thì đó là cuốn rất đáng đọc. Văn hóa Huế tinh tế và đa dạng lắm, có khi đi hết cả một đời người vẫn không hiểu hết được. Cá nhân tôi, là người Huế, vẫn không dám chắc mình hiểu hết, hiểu cặn kẻ về miền đất này, đôi khi vẫn “bí” khi được hỏi. Tượng đài Sông Hương là dành cho những người con của Huế và những ai nặng nợ với chốn này… Tôi biết, người yêu Huế nhiều lắm mà người không cảm tình với nó cũng không ít. Nhưng theo tôi, trước khi đưa ra nhận xét về một vùng đất thì cũng nên tự hỏi mình đã hiểu hết về nó chưa. Một thành phố thâm trầm, một nền văn hóa tinh tế và đậm đặc tính tâm linh như văn hóa Huế thì hiểu được nó chẳng đơn giản chút nào…

Tượng đài Sông Hương gồm những tạp bút, bút ký của những nhà văn, nhà thơ, nhà báo khá quen thuộc thường hay viết về Huế, người gốc Huế có mà người không phải gốc Huế cũng có. Những bài viết về nhiều đề tài khác nhau, văn phong cũng rất đa dạng, nhưng có một điểm chung là các tác giả đều có một tình yêu đặc biệt với Huế. Nếu xét về bố cục tổng thể thì đúng là không đều tay và ít nhất quán về phong cách, cũng là điểm cần thông cảm mà bỏ qua đối với một cuốn sách mang tính sưu tập.

Và theo thói quen cố hữu, tôi hay chọn cho riêng mình một bài hát hay nhất khi lần đầu thưởng thức một đĩa hát mới và nếu cũng làm như thế với cuốn sách này thì tôi xin được chọn bài Trái cấm vườn nhà tôi của Nguyễn Hữu Thông. Câu chuyện về cây ổi dành cho chim trong gia đình tác giả đặt ra một vấn đề mà có thể nhiều người ủng hộ nhiệt liệt, nhưng cũng có người phản đối gắt gao. Dù sao, bài viết đã lý giải một tính cách Huế không hề trộn lẫn và giúp những ai muốn tìm hiếu triết lý sâu xa của tâm hồn Huế bỗng thấy sáng tỏ một vấn đề.

Tôi thích bài viết này cũng bởi tìm thấy bóng hình của gia đình mình trong đó. Nhà tôi chưa hẳn là nhà vườn tiêu biểu của Huế nhưng có những rẻo đất nhỏ bao quanh, không rộng nhưng trước đây vẫn có khá nhiều cây; ngoài các loài hoa và cây cảnh là những cây ăn trái như khế, ổi, mận, sa-bô-chê, táo, v.v. tất cả đều là những giống chọn lọc. Ổi xá lị căng tròn xanh mơn mởn, giòn tan và ít hột, mận thì đỏ au và đặc ruột đến nỗi phải dùng dao cắt chứ không thể bẻ được bằng tay, khế thì ngọt thanh, vàng ươm và căng tròn không một vết nhăn. Nhà tôi vốn ít người nên mùa nào thức ấy, cây trái treo lủng lẳng trên cây ăn chẳng hết. Dù vậy, rất ít khi me tôi gọi người đến bán như vài nhà vườn vẫn làm. Và lý do đưa ra là thấy trái đẹp quá không nỡ hái, cứ muốn để trên cây cho đẹp, khi có khách đến chơi thì hái tặng cho họ một vài quả cho vui. Đó cũng là cái lãng mạn kiểu Huế. Người ta bảo, vườn Huế khác vườn trong Nam ở chỗ vườn Huế không hề gắn với khái niệm kinh tế là vì thế.

Trong các giờ dạy về văn hóa của tôi, bao giờ cũng có đề tài gia đình và hẳn nhiên trong đó có bàn về việc nuôi dạy và giáo dục trẻ nhỏ. Những quan niệm nuôi dạy con cái trái ngược giữa phương Đông và phương Tây luôn thu hút sự quan tâm. Bao giờ cũng vậy, những cái mới, cái lạ đều được ủng hộ nhiệt tình, có lẽ vì đó là những khái niệm nói theo tiếng Anh là “mở mắt” (eye-opening). Thế nhưng, khi đọc Trái cấm vườn nhà tôi, người ủng hộ cái mới, cái lạ lại như tái phát hiện một khía cạnh khác, một cách nhìn khác về một điều tưởng như là cũ, là lạc hậu, là lỗi thời. Cái quy định của người cha trong bài viết về cây ổi dành cho chim, không cho phép bất cứ đứa con nào đụng vào nghe có vẻ vô lý, thậm chí kỳ quặt với những người xứ khác, vốn sống trong một môi trường ít khắt khe hơn về kỷ luật gia đình. Với những ai ủng hộ thì quy định đó là một lằn ranh phải có mà nếu vượt qua nó thì kỷ luật không còn. Cái lằn ranh đó, bó gọn trong một gia đình, là một quy định phải có để giáo dục con cái và gìn giữ nền tảng gia đình. Cũng cái lằn ranh đó, suy rộng ra, là kỷ cương xã hội mà thiếu nó thì xã hội sẽ bấn loạn. Đối với phe chống đối, cho mình thuộc nhóm “cách tân” thì lằn ranh đó là biểu tượng của sự giới hạn, sự mất tự do và việc tồn tại của nó là một “cái gai” kìm hãm sự phát triển của xã hội. Thế nhưng, dù ủng hộ hay phản đối, tán thành hay chỉ trích, thậm chí giữ vị trí trung dung thì lằn ranh đó vẫn cứ tồn tại như nó vốn có…

Ngoài bài viết này ra, Tượng đài sông Hương còn có nhiều bài đáng đọc khác. Hoàng Phủ Ngọc Tường tinh tế phát hiện ra một Miền cỏ thơm gợi nhắc tư tưởng “Hoa thường hay héo cỏ thường tươi” của Nguyễn Trãi; Thái Kim Lan diễn tả rất thực tính cách “con sông dùng dằng con sông không chảy” của con người xứ này trong Nửa chuyến về Tết và một vài bài viết hay khác. Banh Hue

Printed in To Vietnam with Love: A Travel Guide for Connoisseur by Thingsasian Press, 2008

    Formerly the imperial capital of Vietnam, modern-day Hue is characterized by a unique mix of the royal life and common lifestyles. That combination can be found in various aspects of day-to-day life, and the cuisine is no exception. Because of the city’s noble heritage, dishes are diverse and well known for their distinctive flavors. Among the foods that visitors should try is banh Hue. The umbrella term for a type of small, often bite-sized dishes, banh Hue comes in many different varieties, all made from the same, simple ingredients: regular rice, sticky rice, or cassava flour, plus shrimp and/or pork. The secret then lies in the way those ingredients are put together.

 

    Even more interesting is that within each kind of banh Hue usually two versions exist. One is served at formal meals and the other on more casual occasions. Often, the differences are so subtle that even some Hue locals do not notice. For example, banh nam and banh la are seemingly similar: sticky packets of steamed rice flour filled with ground shrimp and pork. But while banh nam is wrapped in banana leaves, the ultra-thin banh la is wrapped in la dong, another type of leaf which adds a special fragrance that the banana lacks. And banh la is always accompanied by cha tom patties, made from shrimp.

    The same duality holds true for banh bot loc, whose shrimp and boiled pork inside a nearly translucent tube of cassava flour. The ones wrapped in banana leaves look neat and are used for formal meals, while the more modest ones without leaves are sold by street venders as snacks. As well, banh beo, which is a disc of steamed rice paper batter topped with a mixture of minced shrimp and green onions, has two types: banh beo dia is displayed on plates, while the stickier banh beo chen is served in tiny bowls.

    I like banh beo chen because it is fun to eat. Children often compete with each other, counting the number of bowls they leave after the meal. Originally, to eat banh beo, diners used knives made of bamboo. Today, to suit the formal atmosphere in restaurants, chopsticks are provided instead. But if you buy banh beo from street venders, chances are that you may still be given a bamboo knife and can eat the snack in the traditional way.

    The next set of differences when it comes to banh Hue concerns the sauces. As you already know, nuoc man (fish sauce) is the staple ingredient for Vietnamese sauces. Fish sauce by itself is unique _ many visitors find its distinctive smell unbearable _ but how Vietnamese cooks use it to make so many different kinds of sauces is impressive. The key is in the amount of supplementary ingredients added. A squeeze of lime juice, some slices of green and/or red chili, a little bit of fresh garlic, a dash of sugar, and varying amounts of water, for example, can all bring about very different results. And the most interesting part for me? Making sauces must be learned by experience, not from recipes.

 

    Each type of banh Hue should be served with a different kind of fish sauce. Banh bot loc, banh nam and banh la go well with pure, salty fish sauce, plus some slices of green and red chili and nothing else. Banh uot, which is a sheet of steamed rice flour containing shrimp (tom) or grilled meat (thit nuong) and fresh herbs, must be dipped into a mixture of fish sauce, shredded chili, garlic, and lots of lime juice. Both banh beo and banh it, a pork-filled, sticky rice flour dumpling, taste best with fish sauce and other spices such as sugar, chili, some drops of lime juice, and especially shrimp paste.

    Another important distinction of Hue cuisine is that it must be pleasing to the eye. Hue cooks believe that the appearance of the dish is by no means less important than its taste. Each dish is a combination of specific colors and shapes. Traditionally, banh la is cut up into rectangular shapes and placed neatly on a plate surrounding cubes of cha tom, though some cooks roll the cha tom inside the banh la. Banh khoai provides a good example of artisanship too. This is perhaps Hue’s most famous banh Hue specialty, an omelet-style dish consisting of a rice flour “crepe” filled with pork, shrimp, and bean sprouts. When presented properly, it is its own work of art.

    Because of Hue’s imperial legacy, a history of emperors who ate dozens of different dishes at a single meal, don’t expect an abundance of food when you order. You will receive just a little of each dish at a time. While this may seem unsatisfying to Western appetites at first, what it means is that you will always have room to try just one more of the many types of banh Hue offered around the city.

 

"What Do You Do on Tet Vacation?"

Right before Tet vacation, my friend J. came all the way from Colorado to visit me. Seeing people preparing for Tet, she asked a good question “What do you guys do on Tet vacation?” Now that Tet has freshly passed by, it’s easier for me to answer the question. Of course the ways that people spend Tet vary and what they do this year is different from what they did last year and what they will next year. The following is just mine this year. As you already know from the entry Hue Tet and Altars, the first activity of Tet is on the 23rd of December (according to Lunar calendar) when the kitchen gods are believed to go back to Heaven. As for me, it’s also the time I begin to think about some errands to run for Tet. Besides going to the supermarket to buy foods and drinks, I also consider what kind of flower to buy. Flowers are an indispensable thing on this occasion. In Hue, the flower market is organized once a year in the square in front of the Flag Tower, not mentioning other smaller-scale ones in and around the city. Apricot and peach blossoms are sold on the pedestrians’ street Nguyen Dinh Chieu alongside the river and near Truong Tien Bridge. Though apricot blossom is a symbol of Tet in the South, this year, due to the cold and rainy weather that lingered for days  before Tet, apricot became a rarity. We need flowers to decorate the house and the altars. After some visits to the flower markets, I went back home with carnations for the living room and chrysanthemums for the altars and the house.

  

When Tet was drawing nearer, I began to decorate the altars and the living room where we would welcome visitors. Everyone wants his house to look its best on Tet. On the 30th December, we had a ceremony in front of the altar meant to invite our passed-away ancestors to come back to celebrate Tet with us. The New Year Eve is the most ever-waited moment. I often watch the Tet program on TV while waiting for the midnight and I like that moment best when every house sets up another altar in the house and soon the air is bathed in the scent of incense. Since fire-crackers were banned, people have had a new practice of going out at midnight to see fireworks which are often set off in the park of Nghenh Luong Dinh.

I got up rather late on the first day of Tet though knowing that the reverse should be the case. (I hadn’t slept enough the night before.) The first thing I do was delivering li xi (bonus money) to my nephew and niece. Money was wrapped in red envelops, the color believed to bring good luck to people. You might think giving children money is not a good routine, but it is tradition and kids sometimes need money to buy what they like. The rest of the morning was spent on a visit to the native village and to my passed-away grand-parents’ tombs. In the afternoon I went visiting some close relatives. The remaining time of Tet was for welcoming and visiting neighbors and friends and, for sure, lots of eating and drinking. Most of the visits on Tet are unexpected, “Just like a hike-and-seek game,” some people say.

The activity that marks the end of Tet is the ceremony to “say goodbye” to the passed-away ancestors. Officially Tet ends after that but the spirit of Tet often lingers until long later. This year because the event fell on a weekend and ended on a Friday, we had an even longer vacation.

Though Tet traditions are still basically kept, the preparation for the occasion has changed considerably. “Modern life” brings people to supermarkets to buy traditional foods instead of making them by themselves and they miss the most interesting part of Tet. Women and girls today lose the opportunity to boast their cooking gifts. “Công,” the first and foremost virtue of a traditional Vietnamese woman is becoming alienated to those of today. Also, if you noticed, you might see that people tend to visit each other less. I am not  saying this change is good or bad but that’s the reality. Some people, especially the young, have a new tendency to travel out of town and think it’s trendy to do so. The coming-back-home tradition starts to phase out among the youth but personally, I still support the idea that we should be home for Tet, just as Westerners “home for Christmas.” Tet is a family reunion though.

I'm Published

I have good news to break. My 4 pieces of writing have just been published in the book To Vietnam With Love: A Travel Guide for the Connoisseur (Edited & with contributions by Kim Fay) This is among the acclaimed series of eight guidebooks To Asia With Love. Though I sometimes write books and articles for magazines, this is special because the book is printed and published abroad.

When I got the invitation to contribute to the book, I was all at once impressed by the editor’s idea, which I thought clever and original. The book itself is a nice surprise if in your mind guidebooks are obviously to supply travelers with helpful but somewhat boring facts and nothing else. These guidebooks offer more than that. They feature personal freshly first-hand stories, narrated by a wide range of writers, both professional and freelance: writers, teachers, NGO volunteers, war veterans, Viet Kieu, expatriates, etc. (There are in fact almost 60 of us.) The essays, intended not only to inform but inspire, are followed by fact files which provides all the relevant information mentioned in the essay. In this sense, the book can be used on its own and/or preferably together with another regular guidebook. As a tourist, I need the information necessary for my travels, but as a reader, I enjoy reading personal in-depth traveling stories, still, as a writer, I prefer narrating real tales rather than collecting just facts and information. And that’s the reason why I decided to contribute my part to the project.

Writing for books differs in that there is a deadline. But the result is rewarding. I have received the complimentary copies from the publisher and think it’s a gorgeous book not for tourists only but for all those who love Vietnam; not only because of the great content, but the decent way it’s decorated as well. This is to read over a cup of coffee or a sip of tea in between your trips.

Hue Festival 2008 _ A Glimspe

As planned, Hue Festival took place in the first week of June.

This beautiful boat is getting ready for the program called Legends of the Perfume River. The boat, which is 6.5m wide and 27m long, is modeled after the one for the kings in the past. Originally the royal boat was of two floors but, according to the designers, the bridges spanning the Perfume River today are too low for that height. The boat has room for 100 people and will be accompanied by a team of dragon boats on a journey from Minh Mang Tomb to Phu Van Lau. Tales are told on the way.

  
From Truong Tien Bridge, the pedestrian street Nguyen Dinh Chieu looks more vivid with the comics in the outdoor exhibition Mat Ke (Faces Tell). The paintings mirror themselves on the river. Notice the prize flamboyant flower tree which is, without fail, in full bloom every summer. That is absolutely the most beautiful flamboyant tree in Hue.

These horses in front of Saigon Morin Hotel catch the attention of thousands of people waiting at the traffic lights near Truong Tien Bridge. And this one is galloping across the citadel. They are all made of plastic bags.

Festivals come and go but these remain. The launch of the drinking water fountains and the area maps for tourists come so quietly but bring back a significant benefit for the community. In an attempt of supplying pure water for the community, the city finally has the fountains installed on different locations around Hue City. The water is filtered and pure enough to drink. The area maps provide information about places of interest in the area. Wish these projects, which are for the community, are well protected by the community.

(For ref: The round white fountain is located in the park right in front of College of Education and the red brick one is one of the two at Phu Van Lau. There is another, dual, inside the Children House, and a "bear paw", the name of the fountain, in the park in front of Hai Ba Trung High School, too.)

Lotuses in Bloom

 

 
If you come to visit Hue City on these days, you’ll spot pink lotuses everywhere, floating on the river, dancing up on Truong Tien Bridge and dangling on trees alongside the main streets throughout the city. No, it’s not summer yet, the season when lotuses are in full bloom. It’s the decoration for the Buddha’s Birthday (Le Phat Dan) which takes place every year in lunar April. In a city where 80% of the inhabitants are Buddhists and Buddhism followers and with more than 100 pagodas, that this day is celebrated more energetically in Hue is no surprise. This year, the event becomes even more important while Vietnam is hosting the United Nations Day of Vesak. This is also considered one of the pre-Hue Festival activities which will take place in the first week of June. Click on each photo to see its  larger version.

The beautiful Perfume River becomes more splendid with the seven giant silk lotuses arranged in the middle of the river, right in front of Phu Van Lau with the imposing flag tower on the background. At night, the light lit inside make them stand out in the dark, which attract thousands of admirers.

Le Loi Street, one of the nicest streets in Hue is decorated with these gates made of hundreds of silk lotuses. Those are to welcome the parade which will happen on the 14th night starting from ancient Dieu De Pagoda to Tu Dam in the area of Nam Giao. This parade, called Ruoc Phat, is actually not new to this Buddhist center but has been just revived.

Buddhism is an integral part of Hue culture. One can never understand the culture of Hue fully if one lacks the basic knowledge of Buddhism. Many Hue people still keep strictly the customs originated from Buddhism; eating vegetarian food on full-moon days is an example. Buddha’s Birthday is among very few occasions when people in the city decorate their houses with flags and lanterns. Hue is famous for its peaceful life and Hue inhabitants possess some unique characters. It’s Buddhism that explains a great part of the story.

Bridge of Love…

Is the name I give to the covered bridges I know…

1. Lai Vien Kieu in Hoi An is, without doubt, the most renowned bridge of the type in the country, better known to the locals as Cau Nhat Ban (Janpanese Bridge) or Chua Cau (Pagoda Bridge.) The bridge itself is a perfect example of the combination of the Japanese and Vietnamese architectures, simple but elegant. From afar, it looks like a cosy house with pink walls and a roof made of dark green tiles shining up in the sun. People in Hoi An believe their bridge is connected with a myth about a monster called con Cù. Its giant body spreads across various countries with its head in Japan, its tail in India, and its body in Hoi An. Because of its giant size, if it turned, then Japan would shake with earthquakes; Hoi An and India would suffer in the process. Therefore the bridge was built as a curse on the monster keeping it from turning hence ensuring peaceful lives for the three countries. The story sounds mythical but humane. In this sense, it is the bridge that saves the countries. At the time, many Japanese people settled down in Hoi An where they did business for their living. Chua Cau was, for them, a national embodiment of their fatherland. If you click on each pic, you'll see its full-sized version.

 

2. Born and raised in Hue but not until recently have I seen the well-known bridge mentioned in the popular folk song “Ai ve cau ngoi Thanh Toan, cho em ve voi mot doan cho vui…” The bridge is located in rustic Thanh Toan Village, around 7 km from the city of Hue. The modest name Cau Ngoi Thanh Toan in itself evokes the image of a bridge with a tiled roof to distiguish from other bridges. Although Thanh Toan Bridge was not the only covered bridge in and around ancient Hue, it was different in that while the others were mainly for decorative purposes, the ones in the Citadel, for example, Thanh Toan Bridge has dual commitments, for transport and shelter. Spanning a small creek, which is full of water in the rainny season, but often runs dry in the summer. It’s said that Lady Hoang Thi Dao, a native of the village and wife of a wealthy mandarin in the court of King Le Hien Tong, donated money to have this bridge built for charity purpose. Stepping on the bridge, visitors soon feel relaxed. Of note are the two long wooden pedestals running along both sides of the bridge serving as benches for passers-by. After buying food from the village market nearby, people could stop at the bridge, sit on the benches, enjoy breezes from the creek or converse. Though fishing isn’t my hobby, I imagine it is perfect for fishing, (if there are fish in there). Later, a small shrine was added on the bridge in dedication to Lady Dao. The curved bridge looks both rustic and royal. When I came, a small building was being constructed just a short distance from the bridge, which was to house farming tools on display. When finished, that gallery would make the journey to Thanh Toan Bridge complete. Visitors can buy things  from the market and learn how villagers work with their tools.

 

3. If the bridge in Hoi An is a sacred place soaked with the love for the country, the bridge outside Hue is the one of love for the people, then the covered bridge in far-away Madison County depicted in my all-time favorite movie The Bridges of Madison County is the one of romantic love. The red, solid-looking bridge standing out in the field of wild flowers witnesses the love of rugged photographer Robert and Francesca with passion, happiness, disappointment and death...

 

The three different bridges in the three areas may look very different and serve various purposes but share one thing in common: human love.

 

 

Wandering Souls

If you happen to visit Hue during the period of May 23 to 31 (according to lunnar calendar), you may see small altars in front of houses here and there every afternoon and feel the fragrance of incense floating in rare summer breezes. They are set up to remember those innocent people who were killed in a historical event called “That thu Kinh do” (The Fall of the Imperial Capital) dated back to 1885. Due to the lingering conflicts between the Hue imperial court (Trieu dinh Hue) and the French envoys, on the night of May 23rd, Ton That Thuyet, the minister of war, and his men intended to attack General de Courcy and French soldiers while they were on their way back from a ball crossing Thanh Long Bridge. But for some reasons, the actual attack didn’t take place until later that night. (Hence the nick name Pont de L'Attentat _ Cau Muu Sat.) At about 2a.m., fast sleeping people were suddenly woken up by the deafening sounds of cannons. The envoy’s residence and Mang Ca Post were simultaneously attacked. It was a fight of heroism against unjustice but unfortunately an unequal battle as well. Ton That Thuyet’s soldier’s bravery couldn’t compete with French soldiers who were more in population and better equipped. The worst thing was that many innocent men living within the walled imperial city were killed while trying to escape though the gates. The narrow streets in the imperial city were full of dead bodies which later were burried collectively at Ba Don area near Ngu Binh Mountain. The ill-fated victims have been called wandering souls since then.

Vietnamese people worship the dead. So a temple named   Mieu Am Hon (Temple of Wandering Souls) was soon built on the corner of  Mai Thuc Loan and Le Thanh Ton streets to honor those unfortunate fates. Every year on the occasion, a formal ceremony is carried out there. The habit soon spread to all the houses in the city. Each family choses a convenient time between May 23 and 31 and carries out a similar anniversary at home in the open air. They do this with great respect and mixed feelings. They are proud of heroic Ton That Thuyet, who dared to make a violent reaction to the arrogant French envoys. But they also feel painful for the poor and dependent situation at the time of the imperial court. Offerings are usually something that can be taken away with, (just like food to go.) Besides such indispensable dishes as boiled sticky rice, chè and fruits, there are simple things such as boiled sweet potatoes, manioc, corns (on the cob), boiled ground nuts and even cooked rice compressed into globes. After the ceremony, part of the food is given to children, usually poor and curious street ones who happen to pass by during the time. People tend to believe that those children are embodiment of wandering souls and call them living souls. Giving them food is just like giving those wandering dead souls. It is like charity of some sort.  Hue locals like to see their charity imbedded with religion and beliefs.

But the ceremony I was invited to recently was a special one because it was not on land, but on a boat, exactly a double dragon boat, the type for tourists on Perfume River. Every year, a group of sellers at Dong Ba Market gather on this occasion and do the ceremony on the boat. The boat started late afternoon from a wharf in Gia Hoi. When I stepped on the boat, there had been tens of men, women and children and a group of monks come from Tra Am Pagoda. An altar had been set up with the offerings arranged neatly on the tables waiting. At around 5p.m., the boat started up, went under Gia Hoi Bridge, passed Dong Ba Market and under Truong Tien Bridge. We visitors all sat at the two ends of the boat enjoying cool summer breezes from the river and gazed at the beautiful sights passing by. Things look much better  from the river. (By the way, I see many tourists take the dragon tour at night listening to Hue folk songs but to me, it is much wiser to start the river trip earlier in the afternoon so that you can admire both the sights along the river and the night scenes on the way back.) Everything were fine except for the noises that the boat engine made. (If only the boat didn’t have it!) After passing Thien Mu Pagoda, the boat stopped and was anchored at the middle of the river. That is the largest and most beautiful part of the river with Thien Mu Tower and Van Thanh in front, mountains on the left shining up in dying sunbeams. Things became pleasantly quiet. Fresh air, murmuring breezes and sacred atmosphere. The  ceremony began with the monks in yellow blouses chanting and other people in grey kneeling down in front of the altar. The river, the boat, the altar and the sounds of chanting and small bells floated on the river creating a unique scene. Toward the end of the ceremony, living fishes and the like were released into the water. The boat then headed toward the river bank so that the paper offerings could be burnt. After that the boat went back to the middle of the river and stopped there again. People all sat down on the wooden floor and enjoyed the vegetarian food. Dinner finished as night fell down, dark enough for the final (and the most interesting) part of the ceremony. Hundreds of paper colorful lanterns in lotus shape were released one by one by the people on the boat. Before lowering a lantern onto the river, each one made a secret wish. Each lantern was for a wish and you may release as many lanterns as the wishes you had. The lanterns drifted away with the wind. A large section of the river was soon lightened up in various colors creating a magnificent sence.

The boat started its journey back while people were releasing the lanterns. The city of Hue appeared again, now in colored lights. People came back home feeling warm at heart with the belief that they had just done something good and significant for those wandering souls. And I did, too.

Mặc Cả

Vậy mà thật bất ngờ, entry này lại được khá nhiều bạn đọc yêu thích, đặc biệt là những bạn người nước ngoài. Cho đến bây giờ, khi có dịp gặp lại nhau, trong câu chuyện, thỉnh thoảng bài viết này vẫn được nhắc đến. Sau đây là phiên bản tiếng Việt của bài viết đó.

 
Không, tôi chưa bao giờ thích mặc cả. Thật tình mà nói, tôi không biết cách làm chuyện đó. Khả năng nhớ con số của tôi rất tồi và không thể tính toán được nếu như không có giấy bút. Tôi hầu như không bao giờ đi ra chợ và rất sợ phải mặc cả. Điều duy nhất mà tôi có thể làm trước khi quyết định mua một thứ gì là hỏi một cách ngại ngùng người bán hàng rằng “Chị bán đúng giá đó chứ?” dù biết rất rõ câu trả lời sẽ như thế nào. Điều đó chỉ là để tự trấn an mình đang không mua hớ một món hàng nào đó. Thế mà rốt cuộc tôi vẫn thường đem về những món hàng được mua với giá đắt hơn là em gái tôi mua, cũng món hàng như thế. Dù sao, tôi vẫn thích mua sắm ở siêu thị hay cửa hàng có niêm yết giá cả rõ ràng. Ở đó, người ta đi dọc theo các kệ hàng, tìm thứ mình cần, coi bản giá, đặt món hàng vào xe đẩy, xếp hàng ở quầy tính tiền, thanh toán rồi về. Tất cả trong trật tự và im lặng.

Cho đến một ngày…

Tôi đi nghe một giáo sư người Mỹ nói chuyện. Ông nói ông rất thích cái ý tưởng trang trí tờ bạc Việt Nam bằng hình ảnh những cảnh đẹp khắp đất nước. Ông quan sát cách người Việt mua bán ở ngoài chợ và cho rằng đó chính là cuộc sống. Ông nhìn thấy cuộc sống trong đó còn tôi thì thấy ý tưởng của ông thật là thú vị!

Và tôi bắt đầu quan sát mẹ tôi mua hàng. Mẹ tôi đã già và đôi chân yếu không cho phép bà đi chợ hằng ngày để mua thức ăn như trước nữa dù trong thâm tâm, tôi biết bà rất nhớ điều đó. Mẹ tôi có một trí nhớ rất tốt và rất rành việc mua bán. Dù tuổi đã cao, khả năng tính nhẩm của bà thật đáng khâm phục. Mặc dù bà không hay ra khỏi nhà, (ngoại trừ những lúc cần thiết và khi chúng tôi có thời gian để đưa đi bằng xe máy), bà vẫn có thể mua hầu như mọi thứ ngay tại nhà, trái cây, rau củ, hoa, đồ gia vị, thức ăn sáng và những thứ lặt vặt khác. Bất kể trời mưa hay nắng, những người bán hàng dạo không quên ghé nhà tôi vào những giờ nhất định để bán hàng. Tôi để ý họ cũng bán cho những nhà hàng xóm nhưng thường rất nhanh, bán xong là đi ngay. Nhưng khi đến nhà tôi, họ ở lại lâu hơn. Ở Việt Nam, người ta tin rằng người đầu tiên mua hàng trong ngày có thể đem lại may mắn hoặc xui xẻo cho người bán và vì thế họ luôn muốn được bán mở hàng cho một người nào đó mà họ nghĩ sẽ mang lại may mắn cho chuyến hàng của mình và nhiều người bán dạo thích chọn mẹ tôi làm người mua mở hàng. Họ ghé lại, bán hàng và nói chuyện. Bằng cách hỏi chuyện và mặc cả, mẹ tôi có thể giao tiếp và thiết lập mối quan hệ tốt với nhiều người. Họ nói đủ thứ chuyện và mẹ tôi có thể góp nhặt được nhiều tin tức qua những cuộc nói chuyện đó. Mẹ tôi thắc mắc tại sao hôm nay thứ này lại lên giá và người bán hàng giải thích; mẹ tôi quyết định không mua một món hàng hôm nay, giải thích tại sao bà không mua và thế là cả một câu chuyện dài được kể lại. Rồi thì câu chuyện chuyển qua các chủ đề khác như kinh tế, chính trị, giao thông, thời tiết, xã hội, vv, có thể nói là đủ loại đề tài. Tôi bảo đảm với bạn rằng, mẹ tôi tự cập nhật thông tin bằng cách đó. Quả thật, không đơn thuần là mua và bán hàng nữa mà giống như chia sẻ kinh nghiệm sống.

   

Vị giáo sư nói đúng. Cuộc sống nằm ở đó. Tự bao giờ không hay, tôi bắt đầu có thói quen nhìn mẹ tôi mua hàng. Đôi khi, bà không mặc cả để giảm giá, bà muốn đoan chắc rằng món hàng đó xứng với số tiền bỏ ra. Lắm khi bà sẵn lòng mua một thứ gì đó với giá cao hơn nếu nó thật sự tốt và xứng đáng. Mẹ tôi rất kỹ tính trong việc chọn lựa thực phẩm. Bà luôn muốn mình là người đầu tiên lựa chọn một bó rau, mớ cá hay lố trái cây và sẵn sàng trả giá cao hơn để được làm việc ấy. Điều quan trọng là cả người mua lẫn người bán đều cảm thấy vui và hài lòng sau chuyện mua bán ấy. Tôi bắt đầu nhận ra rằng, đối với mẹ tôi, việc mua sắm hàng ngày này cũng là một thú vui và chúng tôi cảm thấy thiêu thiếu một cái gì nếu một ngày nào đó, vì một lý do nào đó, những người bán hàng dạo không ghé lại nhà bán hàng và nói chuyện.

 

Không, tôi vẫn không thích mặc cả, bởi vì tôi không biết cách. Tôi vẫn thích mua sắm ở các cửa hàng nơi mà giá cả được niêm yết rõ ràng và minh bạch, nơi mà người mua và người bán khoát lên mình những khuôn mặt lãnh đạm, mua bán trong im lặng. (Nhưng đôi khi trông giống như những cái máy!) Không mặc cả, không đùa giỡn, thậm chí không nói lớn tiếng. Nhưng tôi bắt đầu có cái nhìn khoan dung hơn về việc mặc cả. Tôi nhận ra rằng những khu chợ như Đông Ba, Đồng Xuân, hay Bến Thành, vv. không thể một sớm một chiều bị thay thế hoàn toàn bằng những siêu thị hay trung tâm mua sắm kín mít máy điều hòa và sáng choang cửa kính bởi người ta vẫn còn cần đến chúng. Đơn giản vì đó chính là cuộc sống…

Plymouth và món tôm hùm nổi tiếng, đặc sản của Massachusetts
         

Một ngày đẹp trời, chúng tôi lái xe đi Plymouth. Đối với một người thích tìm hiểu về văn hoá như tôi, đó là một cơ hội tuyệt vời vì được tận mắt nhìn thấy vùng đất nơi những người di cư đầu tiên từ nước Anh đặt chân lên the New World. Đó cũng là khu của người da đỏ Indians mà ngày nay người ta gọi một cách trân trọng là Native Americans, vùng đất mệnh danh là Quê hương của nước Mỹ (American’s Home Town). Đừng quên nhấp vào hình ảnh để thấy phiên bản lớn hơn.

Từ Boston đi về hướng Quincy, sau mấy tiếng đồng hồ lái xe, sẽ thấy hiện ra một thành phố nhỏ hiền hoà, dung dị đầy nét thôn dã. Ở đây ít có những toà nhà cao tầng, mà thay vào đó là những cửa hiệu nho nhỏ kề nhau thân thiết trên những con đường phẳng lặng và sạch sẽ. Thỉnh thoảng lại gặp một ngôi giáo đường cổ bằng đá đứng suy tư. Các cửa hiệu bán những món hàng lưu niệm xinh xinh rẻ tiền mà trên đất Mỹ giàu có này đâu đâu cũng thấy. Có vẻ như người Mỹ đang có xu hướng tìm về những mặt hàng lưu niệm có nét cổ xưa và mang tính sáng tạo hơn là những thứ xa xỉ đắt tiền, dù những thứ đó ở đây không thiếu.

Plymouth nhìn ra một cái vịnh tuyệt đẹp nước xanh lam buồn, điểm xuyết bằng những chiếc ca nô xinh xắn. Cảm giác đầu tiên là thật yên bình. Đập vào mắt tôi là phiên bản của chiếc thuyền Mayflower mà bất cứ ai am hiểu lịch sử nước Mỹ đều biết. Năm 1657, một nhóm người Anh đã di cư sang Thế Giới Mới trên chiếc thuyền này. Nếu để ý, bạn sẽ thấy một tảng đá lớn được trưng bày một cách trang trọng gần đó đánh dấu vị trí mà dân di cư đã đặt bước chân đầu tiên của họ lên miền đất hứa. Bên kia đường là tượng đài một người đàn ông da đỏ cao lớn đứng trên một bệ đá thô cứng, mình đóng khố, tóc tết bím dài trên có gắn chiếc lông chim xinh xinh mà tôi tự hỏi có phải đây là người da đỏ đầu tiên mà những Pilgrim Fathers đã nhìn thấy khi vừa cập bến? Cách đó không xa là một toà nhà nhỏ, phía trước phấp phới bay một lá cờ Mỹ. Bên trong trưng bày một ít hiện vật liên quan đến sự kiện lịch sử này. Ở Mỹ, bên cạnh những viện bảo tàng đồ sộ và trang trọng, không hiếm những ngôi nhà nho nhỏ bằng gỗ đơn sơ cũng được gọi là museum. Chúng chỉ như những chốn dừng chân cho du khách nhưng lại cung cấp nhiều điều lý thú. Đôi khi những điều tưởng như nhỏ nhặt ấy lại gây một ấn tượng sâu sắc và đi thẳng vào trí nhớ của con người.

Buổi trưa chúng tôi đem trái cây, thức ăn nhẹ và nước ngọt ra bãi cỏ dọc vùng vịnh ngồi nhâm nhi. Cảm giác yên bình và thanh thản lạ kỳ. Một ngày im mát không nắng, bầu trời xám một màu buồn buồn, ngồi cùng bạn bè tắm những cơn gió biển lành lạnh còn có gì hơn?

Rất tiếc tôi đã không đến được Plimoth Plantation, nơi người ta tái tạo lại một ngôi làng Pilgrim thế kỷ thứ 17, vì không đủ thời gian. Ở đó người ta sống (đóng vai, tất nhiên) và làm việc như cuộc sống thật hồi xưa. Tôi đành tự an ủi mình một ngày trở lại. Tiếc là đã không làm được...

Sau một ngày rong ruổi khắp nơi, chúng tôi hí hửng bước vào một trong những quán ăn cạnh mặt nước nơi có bán món tôm hùm nổi tiếng của Massachusetts. Không khí mặn nồng mùi muối biển. Tôm hùm là đặc sản của nơi đây, to, thịt chắc và ngọt. Con tôm đỏ au co mình trên chiếc đĩa với hai cái càng chính to đùng hấp dẫn. Món này được dọn với khoai tây chiên, sốt mayonnaise và một loại sốt đặc biệt khác làm từ táo trong trong, sền sệt, màu vàng quyến rũ. Dù gia vị ngon và lạ, tôi vẫn phục cái khấu vị tinh tế của người Việt khi ăn loại tôm này với hỗn hợp muối tiêu và chanh hơn, như thường thấy ở Việt Nam. Mùi bơ sữa trong nước sốt của người Mỹ phần nào lấn át mùi vị của hải sản tươi sống. Một bất ngờ thú vị khác là ở tiệm ăn này cũng có kiểu quỵ tiền để mượn kềm bấm càng tôm hùm. Thực khách đến quầy, đưa 1 đô la để mượn cái kềm và sau khi dùng xong trả lại và lấy tiền lui.

Một ngày quả thật là không đủ đối với một người thích quan sát và say mê tìm hiểu văn hoá lịch sử như tôi. Chúng tôi quay về Boston khi trời chập choạng tối mang theo mình cảm giác thú vị của một chuyến đi ngược về quá khứ...

Hue Tet and Altars

This entry is exclusively intended for those who are not Vietnamese and want to know very briefly what Tet in Hue is like. Though some Tet customs are universal throughout the country, Tet in Hue does have some uniqueness due to the fact that Hue was once the feudalistic capital of the country and the royal life undoubtedly influenced and mingled with the common people’s life. (Note that all the following dates are based on the lunnar calendar.) Be sure to click on each photo to see a larger version.

Today, people in other areas in Vietnam have started the new habit of travelling on this occasion but basically, Tet in Hue is still family oriented and centred around family altars. If you visit a house in Hue, you will see the most important place is not the living room, but the altar. In fact, most of the time before Tet is spent decorating the main altar. When you see guys going around selling white fine sand, you know Tet is coming. What is that sand for? It is to replace the sand in incense pots on altars. Many people in Hue still keep the custom of filling the pots with new sand every year.

December 23 is recognized as the first event of Tet celebration. That night every house sets up a small altar to say goodbye to the kitchen gods who are going back to Heaven. The three kitchen gods are believed to witness all the things happenning in the family during the year and now they are going back to report to Jade Emperor. That belief is both religious and educational. During the year, you must behave well in the family unless you want the kitchen gods to report badly about you.

On December 30 (29 if Tet falls in February), there are two important events. In the late afternoon, there is Cung Ruoc Ong Ba. It is to welcome ancestors back home to enjoy Tet with their offspring. All the best things are presented on the main altar. After that comes the family dinner which all the members attend. It is just like the Christmas dinner in the West, but much less formal. Around midnight, there is Cung Giao Thua. It is to say goodbye to the old year and to ring in the new one. An altar is set up in the open air until after midnight.

Depending on each family, on 1st or 2nd January, there is Cung Nha Dat. It is to remember the god/ patron saint who protects the house and land.

3rd January is when Cung Dua Ong Ba takes place. It is to say goodbye to ancestors back to Heaven. This event officially marks the end of Tet. I say officially because in reality, the spirit of Tet lingers until the 10th.

In every house, especially in Hue, there is a small altar hung up on the wall called Trang Ba. It is dedicated to a goddess who protects women in the house. That is why you may find things very feminine up there such as clolorful paper flowers, a tiny mirror, a hair comb, a litlle botlle of fragrant fluid (perfume). Her day is on the 9th of January.

And on the 10th, I’m back to work! :-)

Socializing

One day I got an email from my friend Doug. inviting me to read an evoking piece he found on Hanoimark’s blog. As an American staying in a foreign country, Doug was very eager to know more about Vietnamese culture. He noticed that the Vietnamese were very open and welcoming but he had the distant feeling that he wasn’t allowed into deeper relationships. Mark was a librarian in Toronto. He came to Hanoi to work for some time and in a party hosted by his American friends, he happened to notice the difference in how the Westerners and the Vietnamese socialize. I found his writing fascinating and thought he had an acute sense of observation of human behavior. Though I had never known Mark before, I decided to write this response first for Doug’s interest but also for those Westerners who may come to visit Vietnam some day.

It's fascinating observation and it is so true. His story brings me back to the ideas of two types of party that in Vietnam we call "sitting party" and "standing party" (buffet). "Standing party" is more Westernized while the latter is more traditionally Vietnamese. (Though today buffets are becoming more popular, especially to young people.) I do like that type of party for its informality and casualness but I'm sure "standing party" is something rather weird to the majority of the older in Vietnam. "Standing party" makes it possible for you to go around saying hi to various people, introducing yourself and socializing. In case you say something wrong (say, a slip of the tongue), no one feels hurt; no one cares since they know it is just fun; no commitment, no formality and also, people will forget everything very soon. In such a large group of people many of whom you have just met, what else can be talked besides introduction, work, so and so.

The Vietnamese "sitting party" is quite different. People who know each other tend to sit together in groups. Because they are not strangers, they can be very open and ready to share intimate things ("like in a family" as Mark wrote). They may not notice you because they think you have your own group. That way of partying prevents people from going around to socialize; and they feel no need to. What I don't like about it is its formality. If one is going to give a party like that, one should arrange the seats so that those who know each other can sit together.

The American may like the other way because they like making new friends, which the Vietnamese do, too but they seem more comfortable in their group as they don't believe in making friends so quickly. In a Vietnamese man's mind, friendship is the thing that lasts. The word "friend" in Vietnamese is a close person who can share with you some level of intimacy; a man he doesn't know well or has just met is just "a person he knows", certainly not a "friend" in full meaning. In American culture, "friend" may mean anyone they are talking to. And they do distinguish friendship and friendliness.

Being a Vietnamese who used to live in America and love both cultures, I sometimes find myself torn between the two. During my time in America, I certainly had many American friends and they were very nice and kind to me at school but then, in retrospective, I remember finding myself hanging around with some Asian friends at weekend. In our chatting, we sometimes talked about what we called "the invisible wall" between Americans, an unseen wall made of schedules, plans, appointments, time, etc. They made friends very quickly then went their separate ways as they moved to another class; "easy come, easy go." Is it so that Robert Frost wrote "Good fences make good neighbors" I wonder. I imagine a Vietnamese writer would rather write "Good neighbors are ones without fences".

Mark mentioned the family-like intimacy between Vietnamese friends, "No need to make plans days in advance because it was taken for granted that the group would hang out. One phone call and half an hour later the group might be meeting for coffee or bia hoi." Being a young and rather busy Vietnamese educated both in Vietnam and the US, I certainly feel more comfortable with a schedule in which everything is planned in advance but equally I don't feel frustrated if my friends called me suddenly asking me to join them for a coffee. I may say no if I'm busy, but definitely no complaint. Why angry with those who just want to bring me fun?

So my friends Americans, if you happen to be in a Vietnamese party/meeting and find people clustering in groups without much noticing the others, then take it easy. It doesn't mean that they are not happy with your presence or are not polite to you.

Bargaining

No, I have never been interested in bargaining. Frankly speaking, I have no idea of it. Very bad at remembering numbers; I cannot do calculation in my mind. (I always need a pen and paper to do that.)  I almost never go to the market and I am really afraid of having to bargain.  All I can do is confirm the right price by asking, with a blushing face, “Is that the real price?” though I definitely know what the answer will be.  It is just to assure myself I am not buying something too expensive. But more often than not, I end up buying things at a higher price than my sister doing the same things. Anyway I prefer buying things from a quiet supermarket or a store with price tags on  goods.  There people move along shelves looking for what they want, read price tags, put their purchases in carts, line up at check-out counters, pay and leave.  All in order and silence.

Until one day…

I went to a lecture by an American professor. He said he liked the idea of decorating the Vietnamese banknotes with pictures of interesting places all over the country. He observed the way Vietnamese people buy and sell things in the market and said it was life.  He found life in it and I found his thought fascinating!

And I began to observe my mother buying things.  My mother is old and her weak legs prevent her from going to the market every day for food as before, though I know, deep in her heart, she really misses it.  She has a keen memory and very good at buying things. Her ability to do calculation in her mind, despite her old age, is admirable.  Though she does not go out a lot today (except when needed and when we are free to carry her on our motorbikes,) she can buy almost everything from home, fresh fruits, veggies, flowers, spices, even breakfast in the morning amd snacks in the afternoon.  Rain or shine, street vendors never fail to drop by my house in due time bringing their things.  I note they sell things to the neighbors too but very quickly, a few exchanges and leave, but they stay longer at my house.  Here, people believe that the first person who buys things may bring good or bad luck to the seller and that is why sellers usually expect someone in particular to be their first buyer and these venders always like my mother to be the first.  They drop by, sell things and talk to my mother.  By bargaining and talking, my mother can socialize and set up good relationships with many vendors.  They talk about everything and she collects lots of information through their chatting. My mother questions about the higher price of something and the seller explains the reason why; my mother decides not to buy something and explain why she does not like it and the whole story is told.  And then their chating drifts to traffic, economy, politics, life, etc., almost everything. I assure you, my mother is kept informed of the updated news that way. In fact, it is not simply selling and buying things, it is like sharing living experience.

That professor is right.  Life is all there.  I began to develop a habit of watching my mother buying things. Sometimes, she bargains not just to reduce the price; she makes sure things are value for money.  Every now and then, she is willing to buy something at a higher price if it is really good quality and worthy.  My mother is rather picky about foods. She always wants to be the first person who chooses things and is prepared to pay more for that.  But the most interesting thing is she buys in a way that both the buyer and the seller feel pleased and happy. I came to the realization that, for my mother, this routine affair is entertaining and we feel sad if some day the street venders do not drop by for some reason...

 

No, I still hate bargaining because I do not know how to.  I still enjoy buying things from a shop with prices announced loud and clear, where people put on indifferent faces, buy and sell things in silence (but somewhat like machines), no bargaining, no joking, even no loud talking.  But I have become more tolerant toward bargaining. I realize why the markets like Dong Ba, Dong Xuan, Ben Thanh,etc. cannot be replaced with closed air-conditioned supermarkets as people still need them.  Simply because they are life…
